Actually, I really should say that this is the easiest tortellini soup recipe, EVER!
You can make it more complicated if you want. But, you really won’t want to. My sister, Laurie, clued me in on this quick method for tortellini soup when I was staying with her last week. It is so perfect for the cold days that are coming (or should I say, already here). I made it with our favorite dinner bread. If you’re going to make the bread, start your dough first because the soup will be done in the 15 minutes or so that it takes to bake (or you can just pick up some crusty bread from the store or bakery).
Yes, it is seriously that fast!
Gather the ingredients:
If these items aren’t already in your pantry and freezer add them to your next shopping list and keep them extras hand for an easy meal that is ready in less than 30 minutes! This isn’t really a recipe, it’s just a method of combining ingredients. You can vary the measurements to fit your family.
- 2 cartons of your favorite chicken broth or stock (or the amount that will adequately feed your family, I used 3)
- 1 bag of baby spinach (I used fresh, but frozen would probably work fine in this soup)
- 1 can of diced tomatoes (I used petite diced because no one else in my house likes tomatoes besides me, if they did I would have used stewed tomatoes instead for the added flavor and texture)
- 1 package of tortellini (I used 2 packs of fresh, but frozen would work fine)
- salt, pepper, and garlic to your taste
- grated cheese
I started with the garlic, tomatoes and chicken stock in the pot and brought it to a boil. I used Roasted Garlic from Just Tomatoes, it is one of my favorite pantry spices. If you can’t find it you could certainly use fresh garlic or even granulated garlic.
Once that had boiled a bit I turned down the heat to low-medium, seasoned it well with salt and pepper (taste it to make sure you’re satisfied with the flavor), and then added the spinach. Just dump it in! Stir and it will wilt into the soup.
Then, add the tortellini.
Turn the heat to a simmer until ready to serve.
I topped each bowl with a bit of grated cheese. Serve with your favorite crusty bread. Yes, it really was that easy. it actually took me quite a bit longer to write this all up than it did to make the meal! 🙂
