I’m finally going to share a recipe. It’s kind of hard for me because I don’t really follow recipes, I like to use them as jumping off points and references.
But here goes…
I was in the mood to make some dessert last night. It was a chilly day that screamed “warm apple crisp” but when I went to gather my ingredients we only had 2 apples in the drawer. No apple crisp. Hmmm, hat else is fast and easy? Monkey Bread. Ooops, only one can of biscuits in the fridge. No Monkey Bread. Think. Think. Think…
I can make this work.
Caramel Apple Monkey Bread
- preheat the oven to 375°
- one can of Grands jr biscuits (so happy they came out with this size!!) seperated and quartered
- 2 apples (I had MacIntosh) cut in quarters, remove core parts and slice across the width into 1/4 inch slices
- toss these two things into a ziplock bag with 1/2 cup sugar and 1 T(ablespoon) cinnamon
- remove all the little pices and toss them into a greased loaf pan (don’t pack it down, you want it random and not squished!)
- now place a small sauce pan on the stove, add 1/2 stick of butter (salted is fine, I like a little salt to my caramel) 1/2 cup of brown sugar, 2T corn syrup (I know, I know, but it helps the caramel to not crystalize, just trust me please) 1 or 2T sweetened condensed milk (not absolutely necessary but I like the depth it adds to the flavor, I’ve added a little regular cream instead other times). Cook this until it comes to a nice bubbly rolling boil (all the brown sugar needs to be well disolved).
- pour the caramel all over the top of the mixture in the loaf pan
- bake in the oven for approximately 40 minutes (it should raise a bit and the top will look like cobblestones)
- let it cool in the pan for about 10 minutes and then turn it out onto a serving plate (let the pan sit inverted on the plate for a minute and everything, all the yummy caramel, will work itself down)
- dig in and enjoy (a scoop of vanilla bean ice cream will certainly put it over the top)!
